Paneer in White Gravy | Mughlai Paneer

Paneer in white gravy is prepared by using cashew, yoghurt and fresh cream. This Mughlai style paneer preparation is very different from other rich paneer recipes. this dish is slightly sweet and spicy in taste.

To prepare this gravy keep in mind to use boiled onions so that the gravy colour remains white and you should use yogurt which is not sour and not watery.

Ingredients for Paneer in White Gravy or Mughlai Paneer

Ingredients for cashew paste

4 tbsp broken cashew nuts
1/2 cup water

Ingredients for onion paste

3 chopped onions
2 cup water

Ingredients for cream mixture

1/2 cup cream
6 strands of saffron

Ingredients for Paneer white gravy

500 gm Paneer cut in cubes (Homemade)
1 dry red chilli
4 tbsp ghee / oil
4 cardamom
3 clove
1 stick of cinnamon
3 bay leaf
3 tsp garlic past
3 tsp ginger past
2 finely chopped green chilli
1 cup fresh curd
1/4 cup chopped coriander
1 tsp sugar
salt to taste
1/2 cup khoya

Steps to prepare Paneer in White Gravy or Mughlai Paneer

  • Soak cashew nuts in water for half an hour
  • now prepare a smooth past in grinder
  • boil chopped onions till they get soft
  • cool them and prepare smooth past using a grinder
  • warm the cream a bit and mix saffron strands

White Gravy preparation for Mughlai Paneer

  • heat the ghee / oil in a pan
  • once hot add the spices to it
  • stir fry for a minute or two
  • now add ginger and garlic past
  • mix onion past, chopped chilli’s
  • mix well and fry until the mixture near dry
  • to this add cashew nut past and khoya , stir fry
  • add salt to taste and sugar mix well
  • turn flame to medium heat
  • add yogurt and mix well
  • add paneer cubes mix them
  • now add water as per your liking for gravy consistency
  • mix cream and saffron mixture
  • let it boil for few minutes on medium flame

Your paneer in white gravy or Mughlai paneer is ready to serve, garnish it with chopped coriander and serve it with different options of roti / breads, like nan, lachha nan, paratha etc.
